mango chia pudding
mango chia pudding:
1/2 cup coconut milk (I used canned)
2 tablespoons chia seeds
1/4 teaspoon honey (add more or less to adjust sweetness)
1/4 lime, juiced
combine coconut milk, chia seeds and honey in a jar and shake a couple of times. put it in the fridge for at least an hour but preferably overnight.
blend flesh of one mango with 1/4 of a lime, juiced.
top the coconut chia pudding with this purée, ENJOY!
good fats, fiber, protein, aminos and antioxidants from the chia seeds. vitamin A & C, fiber and more antioxidants from the mangoes. they’re in season right now, YUM!
