healthy + homemade raspberry chipotle sauce

I've always been a condiment gal, I need some sort of sauce with most of my food. Who's with me? We had a big ol' pork loin to cook, so we started brainstorming sauce ideas and came up with this super easy raspberry chipotle. We've been playing around with our new kitchen gadgets from the wedding and used our Vitamix for this recipe, but a food processor or blender will work fine. I'm excited to start making more sauces because a lot of store-bought sauces have high fructose corn syrup, a processed sugar additive that essentially has no nutritional value and can be bad for your health if consumed excessively. (No thank you to having that in my diet!)
This recipe makes enough sauce for two people who like a lot of sauce, so double or triple the recipe as needed.
INGREDIENTS:
1 1/2 cup frozen raspberries
3 tsp olive oil
1 tsp apple cider vinegar
half can of chipotle peppers in adobo sauce (use less to keep the recipe less spicy)
2 tablespoons honey
DIRECTIONS:
1. Add 1 cup of frozen raspberries, olive oil, chipotle peppers in adobo sauce and honey to a blender or food processor
2. Blend for 30-45 seconds or until the mixture is pureed
3. Put the mixture in pot over medium heat, add 1/2 cup of the raspberries
4. Mash raspberries with a wooden spoon or masher, creating your preferred texture
When the mixture is heated through, enjoy over pork loin or your protein of choice.
