banh mi bowl



I'm ditching the bread and putting a twist on the typical banh mi with this banh mi bowl recipe! These are easy to have prepped and heat up for dinner or bring for lunch.


INGREDIENTS:


- jasmine rice


for the meat:

1 lbs ground pork

2 large garlic cloves

3 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon rice vinegar

1 teaspoon Sriracha


Sriracha Mayo sauce:

1/4 cup Mayo

5 teaspoons sriracha

1 teaspoon apple cider vinegar or lime


Toppings:

- cilantro

- cucumbers

- pickled carrots

- pickled daikon radish

- jalapeños


INSTRUCTIONS:

1. Cook rice according to package

2. Brown ground pork with minced garlic. Once it’s cooked add the rest of the ingredients listed under “for the meat” and heat over low-medium for 2-3 minutes.

3. Combine sauce ingredients to make sriracha mayo

4. Add rice, meat & toppings to a bowl. Top with sriracha Mayo. ENJOY!
