almond flour choc. chip cookies

Thank God for a little sister, who has a boyfriend, whose mom is a fabulous chef and baker, because that’s where this recipe came from! Anytime us “kids” would road trip, starting in high school, these cookies were along with us. I always needed the recipe but would have guessed it was something fancy. However, they are actually pretty easy AND they are quite nutritious. These chocolate chip cookies happen to be grain free! So for those of you that have that nutrition need, these cookies are even perfect for you. They are pretty much bite size, so a few at a time works for me.
What you’ll need:
3 cups of almond flour
1 tsp. baking soda
1 tsp. sea salt
½ cup coconut oil, melted
½ cup honey
1 tsp. vanilla extract
2 large eggs
1 ½ cup mini semi-sweet chocolate chips
Optional: raisins, walnuts, peanut butter chips
How you’ll do it:
Preheat your over to 375 degrees
In a large mixing bowl, combine dry ingredients
*tip* use exactly ½ cup coconut oil, melted or a little less; do not use more than that unless you plan to add a bit more almond flour to keep the consistency right.
Add the wet ingredients to the dry ingredient mixture.
Stir in the chocolate chips (or any other optional ingredients)
Spray your pan with non-stick spray or lightly coat it with coconut oil
Place tablespoon size balls on your pan
Bake for 8-10 minutes (I usually do 8 minutes because I like the inside of mine a bit doughy)
By the way, the cookie dough from these is my absolute favorite dough!!! I usually make myself a personal bowl of dough. ATTEMPT AT YOUR OWN RISK, hehe! So scrumptious! Enjoy, y’all!
