RECIPE: SKINNY STRATA

This recipe makes for the the PERFECT brunch!!! I think this skinny strata [a bit spicy] is my new favorite hot breakfast dish! It is so scrumptious, very nutritious and is the perfect amount of spicy! To top it off, (literally) you can serve it with guacamole, queso, salsa, sour cream, refried beans, and/or any other delicious side that you wish! This recipe is very easy, plus everyone at your next brunch will be so impressed!
Ingredients:
2 large whole-wheat tortillas
4 eggs
1 lbs. hot turkey breakfast sausage (I used Jennie-O; use mild for a less spicy dish)
½ cup milk
½ cup shredded cheese (whichever kind you prefer, I used the 4-cheese Mexican blend)
½ cup thinly chopped green onions
½ cup mushrooms chopped into very small pieces
1 can chipotle peppers in adobe sauce
Sour cream
Guacamole
Salsa

Instructions:
Cook the turkey breakfast sausage according to the instructions on the package
Heat the oven to 350 degrees
Spray your pan with non-stick spray (I used an 11 X 7 pan)
Place the whole-wheat tortillas on the bottom of the pan
Cover the tortillas with the cooked sausage
Cut the chipotle peppers into thin pieces
In a medium bowl, whisk the eggs and mix in the milk, cheese, green onions, mushrooms and chipotle peppers
Add 1 tablespoon of the adobe sauce to the mixture
Pour the egg mixture overtop of the sausage
Bake at 350 degrees for 30 minutes
Serve with any or all of the following: guacamole, salsa, sour cream, (those are the three that I served mine with) refried beans and/or queso. Set out some tortilla chips with all of this and you are set!
I loved mine topped with sour cream and salsa (mixed together), with chips and guac. on the side. Happy brunching! Or like I did, breakfast for dinner!
