Red potato skillet breakfast


Jacob and I have been all about the skillet recipe videos online. That has inspired us to whip out our skillet a bit more & a breakfast hash is always a good idea! We pretty much just used items we already had & it turned out deliciously. Here's what you'll need: (& if your missing an item, substitute something else for it... this isn't a strict recipe ;))

INGREDIENTS:

  • 1 large red potato

  • 4 eggs

  • 1/2 green pepper

  • 2-4 large button mushrooms

  • A big handful of spinach

  • 1/2 white onion

  • 1 jalapeño

  • Salt

  • Pepper

  • Olive oil

INSTRUCTIONS:

  1. Dice potatoes, onions, green pepper, jalapeño & mushrooms

  2. Preheat oven to 350°

  3. Coat potatoes in olive oil & place on cookie sheet in the oven for 10-15 minutes until browned

  4. Put 1/2 tablespoon of olive oil in skillet with green peppers, jalapeños & onions on medium heat for about 10-15 minutes until vegetables have softened, stirring occasionally

  5. Add mushrooms, spinach & a couple dashes of salt and pepper to the skillet

  6. Stir in potatoes to the mixture

  7. Create four indentions in the mixture

  8. Crack one egg in each of the four cleared areas

  9. Put skillet in oven, cook for about 15-20 minutes until eggs have hardened... (depending on how you like your eggs you could probably take the skillet out of the oven after ten minutes)

It's very delicious, you probably won't need to top it with much; but if you'd like... salsa, ketchup, and/or guacamole would all be good additions. ENJOY!! xxo
