Fresh Strawberry Crisp


If you've been to the grocery store lately (at least in Texas), you've seen the abundance of juicy strawberries that are not only delicious, but on sale. Not to mention, the farmer's markets will be starting soon. My point, strawberries are in season & I was craving a different type of dessert; so here it is, Fresh Strawberry Crisp.

Ingredients:

6 cups sliced strawberries

3 teaspoons vanilla extract

1/4 cup flour + 3 tablespoons flour

3/4 cup oats

3 tablespoons melted butter

3 tablespoons maple syrup

2 tablespoons finely chopped almonds

1/4 teaspoon salt

Instructions:

  1. Preheat the oven to 350°

  2. In a large bowl, mix sliced strawberries, vanilla extract and 3 tablespoons flour (cornstarch might even work better, but I didn't have any) coat evenly

  3. In another bowl, mix oats, 1/4 cup flour, oats, almonds, salt, maple syrup and melted butter

  4. Spray 8 x 8 baking dish with cooking spray

  5. Transfer strawberries to baking dish

  6. Top strawberries with oats mixture, using a spoon to spread *kind of* evenly... there should be strawberries showing in parts (the oat mixture is delicious on it's own too, you know me and the dough)

  7. Bake for 35-45 minutes, until crisp is golden brown

  8. Top with some vanilla ice cream & enjoy

My recommendation: top with Breyers vanilla ice cream. Why Breyers? I usually suggest it because there is no high fructose corn syrup (& it's tasty). I've posted before about not being a fan of products with high fructose corn syrup. Breyers prides itself on "natural" ingredients & the ingredients list is much shorter than others.
