sweet potato nachos


Sweet potato nachos... this recipe has been a huge hit!

Y'all this recipe is delicious. I can pretty much eat sweet potatoes any way. This is my favorite savory form of them. I have to give the credit to Jacob because he came up with "sweet potato nachos," I was hesitant at first. This has been our go-to meal on the weekends. The secret to making it extra tasty, mix sour cream and salsa together and put a bunch on top. Here's the recipe!

Ingredients:

3 large sweet potatoes

1 lbs. ground turkey or ground beef

1 can refried beans

1 jalapeno

1 large tomato

1 cup hatch green chiles

3 green onion stalks

3/4 cup of shredded cheese

Directions:

Slice sweet potato into 1 cm. thick slices

Coat in olive oil

Spread the slices in a single layer over a cookie sheet

Bake for twenty minutes on 400°

In a pan:

Cook ground beef or ground turkey

Add 1/2 packet of taco seasoning and follow taco seasoning instructions

Dice the tomato

Cut hatch green chiles in half

Dice 3 green onion stalks

Dice jalapeño (remove seeds depending on how hot you prefer)

Get sweet potatoes out of the oven

Top sweet potatoes with refried beans, then turkey meat, tomatoes, hatch green chiles, green onions, then shredded cheese

Put back in the oven for 10-15 minutes until heated through and cheese is melted

Top with cilantro and sour cream

Pair with chips, salsa & guacamole
