marvelous mango salsa

Mmm, mangos. I've had some of the most delicious mangos throughout the past week and I cannot get enough of them. My momma and I came up with this marvelous mango salsa recipe and it's officially my favorite. It is perfect to show up with at any summer gathering. It's refreshing, has lots of flavor and is best served with Tostitos scoops or lime tortilla chips! Seriously, when I made this for Jacob he goes, "this needs to be available in the fridge at ALL times!" He loved it; I'm sure you will too! It can be as spicy as you'd like it; (The spicier the better, am I right?) add more or less jalapeño seeds... at your own risk! I like mine hot and dangerous. Have fun.
What you'll need:
3 mangos diced
1 cucumber peeled and diced small
Five ends of green onions chipped
1/3 cup cilantro
1 large juicy lime
1 - 7 oz can of sliced jalapeños [green pickled sliced jalapeño peppers]
1 fresh jalapeño seeded and diced small [leave the seeds to make it more spicy)]
1/2 teaspoon soy sauce
How you'll do it:
Wash all of the fruits and veggies used in this recipe
Peel and dice the three mangos [I found it easiest to cut the mango into fourths, then peel off its skin]
Peel the cucumber and dice it into small pieces
Chop the white ends of five green onions [discard the stringy root ends]
Chop 1/3 cup of cilantro
Slightly drain the can of the pickled sliced jalapeños [save 1/4 of the liquid] and then dice the jalapeño slices that are in the can
Mix all of these ingredients in a bowl
Slice the lime in half and squeeze both halves into the bowl
Pour 1/2 teaspoon of soy sauce and the remaining pickled jalapeño liquid into the bowl
Mix again and serve! [best when served cold] ENJOY, Y'ALL! & stay tuned.
