gluten-free personal banana bread with chocolate & peanut butter chips


Most of you know by now that I am a dessert connoisseur. My sweet tooth is immeasurable and it might be a problem, ha! However, I try to make healthy sweet treats every once in awhile to make my daily dessert sessions a bit more realistic. If you’re looking for a quick dessert for yourself, or possibly you and one other, this is the perfect little recipe. It’s also perfect for those of you that are gluten-free. Not many ingredients needed, so if you’re running short on supplies you can still whip this up!

Ingredients:

3 tablespoons coconut flour

1 ripe banana

1 egg

¼ teaspoon vanilla extract

1-teaspoon pure maple syrup

1-tablespoon chocolate chips

1-tablespoon peanut butter chips

1/8 teaspoon baking soda

To keep this gluten free, use cooking spray (not baking spray) to coat your pans because cooking spray is gluten free while baking spray isn't always.

Preheat your oven to 350 degrees.

There is no certain order in which you must mix these ingredients. Throw everything into the bowl, mix it up (eat a bit of batter, my fav!) and then put it all in one small pan or two small oven safe bowls like I did. Easy, peasy.

Pop in the oven on 350 degrees for 25 minutes.

Cover with butter and ENJOY!
