St. Patty's Day Parfait

These scrumptious St. Patrick’s Day parfaits will be the perfect dessert after your St. Patty's Day corned beef and cabbage! All ages will surely love this dessert. They are SO quick and easy to make; look good and taste GREAT! Easter is right around the corner as well and would make for the perfect Easter dessert too! Feel free to use your creativity when making these. I like using clear cups for these so you can see all the delicious layers. The smaller the cup you choose the more parfaits you will be able to serve. Here’s how it works:

Ingredients:

1 box JELL-o pistachio pudding mix

2 cups + 3 tablespoons of cold milk

1 container Cool Whip or whip cream

2 packs of “stackable “ that’s 12 graham cracker squares

Steps:

+ In a mixing bowl, combine the pudding mix and 2 cups of milk. Whisk for 2 minutes

+ Set this aside, it will be the middle layer of your parfait

+ In a food processor, blend the graham crackers with 3 tablespoons of milk

This allows the graham crackers to become sticky crumbs. This thicker graham cracker part will be the bottom layer of your parfait.

+ Optional cream cheese layer:

1 (8 ounce) package of cream cheese, softened

1 teaspoon of vanilla extract

½ cup sugar

+ Beat the cream cheese with a mixer on medium speed, gradually adding in the sugar and vanilla extract.

+ Finally, in clear cups of whatever size or shape you choose, first layer the graham cracker mixture, followed by the cream cheese if you choose to add that optional layer, then the pistachio pudding layer, and lastly a spoonful of Cool Whip to top it off. I had enough to fill (to the max.) three wine glasses, so the smaller the cups you use the more cups you will be able to fill.

+ In the food processor, without milk, I blended up some extra graham crackers so that I was able to sprinkle some crumbs on top of the Cool Whip. You can also garnish with a graham cracker square.

+ Chill until you plan to serve.

ENJOY!!! I absolutely loved these; my sweet tooth was in Heaven!
